Is the truffle par excellence, the most precious and sought-after. Known in the whole world, it is surely the king of the kitchen. Tuber Magnatum is better known as “bianco d’Alba” it is present also in the Savigno territory. To know more The white truffle grows only in Italy, Istria and Slovenia. In Italy it is mainly present in Emilia- Romagna, Piemonte, Marche and Molise, and in a lesser degree in Toscana, Umbria and Abruzzo. The availability of truffles is related to the season. T The ripening period is from September to December, however it can ripen as early as July and August. It presents a smooth yellow-ochre or yellow-olive coloured peridium, sometimes with rust-brown areas. The gleba is greyish-white in the ripe specimens and it evolves toward the ochre or hazel with very thin veins. It’s aroma is very penetrating but pleasant with a hint of a garlic scent. To be eaten fresh and uncooked, finely sliced in order to garnish the dish.

The flavour of white truffle is pervasive but pleasant with a garlic sensation and it can be completely savoured if consumed raw, finely sliced with the truffle slicer to complete the dish.
